Veggie Chili Cheese Dog

Like many Black women I’m still in work mode so happily items are being removed from agendas, goals becoming achievements. Seems like everyone is in a similar space – the mood not to do much cooking yet attain a semblance of nourishment. Try what I had for dinner tonight. !Adelante y’all!

Veggie Chili Cheese Dog

  • 4 Beyond Sausage Hot Italian or any Veggie Hot Dog
  • 4 pieces Little Northern Bakehouse Gluten Free, Egg Free Bread
  • Organic Monterrey Pepper Jack Cheese thinly sliced
  • Organic Earth Balance Buttery Spread
  • Organic Tomato chopped
  • Organic Red Onion chopped
  • Organic Mayonnaise
  • Organic Dijon Mustard
  • Organic Greens
  • Organic Sauerkraut
  • Organic Red Beans (this recipe calls for the beans to soak overnight so start now)

Cut thawed sausages down the center and place in a frying pan on medium low. Cook about 5 minutes on each side to develop a sear – these sausages do not contain meat so you don’t need to be concerned about under cooking. Set oven to high Broil. Spread Earth Balance on each piece of bread and cover bread with the cheese. Place into the broiler for approximately 1 minute. DO NOT WALK AWAY FROM THE OVEN. Once the cheese is melted, assemble your dogs with particular preferences in mind. Begin with mayonnaise, mustard, onions, and greens; place the sausage on the bread diagonally and then top with the beans. Omit the cheese for the Vegan version or substitute with vegan cheese. Serve with chips, dill pickle spears or whole jalapenos.
