We lost my father Edward F. Sparks twelve years ago today. I am thankful for the blessing of having had a good Dad. He was a excellent provider, nurturer, listener and role model. He became a vegetarian after I had so he would have enjoyed this Gluten Free Spaghetti Alfredo I am sure. Dad “made it” despite being told by his own Father “you’ll never make it” because he’d impregnated and married my mother before finishing undergraduate school. Like most, he did not have a straight shot at success.

Dad decided he wanted to be a dentist when his uncle Dr. Cory Sparks came to visit from Detroit in a shiny, new Cadillac. He was fortunate enough to also have a local mentor Dr. Floyd Thompson. Dr. Thompson was the dentist to all the BIPOC because White dentists in 1940’s Tucson, Arizona would not provide service to them. After Dad graduated from Howard University School of Dentistry, and did his residency in New York City, he moved us back to Tucson in order to work with and eventually take over Dr. Thompson’s practice.

I have lost 6 people I knew intimately in July and August of 2020 which is why I had to take a necessary but brief blogging break. Yvette Scott – so witty with a written word. Beryl Vanterpool – a loving elementary school teacher, sister and friend I met at her home on gorgeous Virgin Gorda, British Virgin Islands. Mrs. Junia Jones – also a long time teacher and principal at Santa Rosa Day School on the Tohono O’odham reservation in Sells, Arizona. Mrs. Jones became the dignified first lady of my grandfather’s church when her husband Rev. Al Jones became the pastor. How I wish we could all share one more plate Gluten Free Spaghetti Alfredo. Rest well my friends.

Gluten Free Spaghetti Alfredo is a creamy, cheesy spaghetti that is lightlylaced with fennel and basil. Pairs well with any protein or as a stand alone entree.

Equipment

  • Paring Knife
  • Measuring Spoons
  • Measuring Cups
  • Large Heat Resistant Spoon
  • Large Skillet or Frying Pan

Ingredients
  

  • 3 cups Water
  • 2 cups Organic Milk
  • 1 16 ounces Gluten Free Spaghetti Equivalent of 1 box
  • 2 Garlic Cloves, minced
  • 2 Not Chick’n Bouillon Cubes
  • 2 tbsp Organic Butter or Butter Substitute
  • ½ cup Parmesan Cheese
  • ½ tsp Spike Onion Seasoning
  • ½ tsp Black Pepper
  • 1 Sprig Fresh chopped Basil Optional

Instructions
 

  • Heat water, milk and bouillon cubes in pan on medium high heat until liquid begins to boil.
  • Mince garlic.
  • Once liquid is boiling, reduce heat to medium low and add all remaining ingredients.
  • Cook until liquid is reduced and thickened, stirring regularly.
  • Garnish with basil if desired.
