12 Minute Vegetables
I usually make 12 Minute Vegetables on Sundays so that I can heat them up on days I don’t feel up to cooking, days like today and yesterday, probably tomorrow too. I would not be creating this post but for the fact I promised my friend Les I would over a month ago. I am distracted obviously, like so many Black people now. I wonder how in the hell anyone would expect us to continue to hold even a modicum of respect for the criminal justice system in this nation.
Similar to when Solange sang Cranes In The Sky, we are tying to forget. Black people must create a myriad of ways to cope with the realization law enforcement can legally kill us for no damn reason. She laments:
I ran my credit card bill up
Thought a new dress would make it better
I tried to work it away
But that just made me even sadder
I tried to keep myself busy
I ran around circles
Think I made myself dizzy
I slept it away, I sexed it away
I read it away
I want not only Black folk but everyone, especially White ones, to make 12 Minute Vegetables. White people you need to be spending less time baking, watching Netflix and doing whatever the hell you generally do. Y’all need to do some work on yourselves; dare I say you need to learn how to be compassionate, develop empathy. You need to learn how to love or you will be dooming us all to a Guyanese kool-aid klatch hosted by Donald and Melania. My ancestors, BIPOC are the rightful heirs to a certain portion of unrequited North America wealth. Nonetheless. I will accept my allotment via the privatized Fedex Postal Service at a port of call yet to be determined if your despot manages to steal another election. 12 Minutes may be too much time for some, so then try the Six Minute Brussel Sprouts. 12 Minute Vegetables
- Large Baking Pan or Cookie Sheet
- Paring Knife
- 1 Medium Head of Organic Broccoli
- 1 Large Organic Zucchini Cut into ¼ inch slices
- 2 Organic Yellow Squash Cut into ¼ inch slices
- 10 Organic Mushrooms, halved
- Organic Olive Oil Butter or Earth Balance (Vegan Butter) work nicely as well but will add salt so adjust accordingly.
- Jane’s Krazy Mixed-Up Salt To taste. You can also substitute plain salt.
- ½ Lemon, juiced Optional
- Preheat oven to 400 degrees.
- Wash vegetables. Take broccoli and cut off the bottom ¼ inch of each stem, and then cut stem in half. Cut off the the stems on zucchini and squash, then slice.
- Cover cookie sheet with foil. Arrange vegetables onto cookie sheet allowing space for each.
- Drizzle olive oil ensuring vegetables are thoroughly coated. Squeeze lemon half over vegetables if desired making sure no seeds are expelled.
- Sprinkle liberally with Jane’s Krazy Mixed Up Salt or plain salt.
- Place pan into oven for 4 minutes.
- Turn pan around 180 degrees and cook for 4 additional minutes.
- Remove from pan from oven and serve.
