Welcome to the place for the best healthy, homemade, holiday dishes. It may be too early to say Season’s Greetings but it’s not too early to get your best Fall desserts of 2021 list compiled. I believe I inherited my sweet tooth directly from my maternal grandfather William Stamps who was known to drink sugar water when lemons were scare. Even though I don’t remember ever eating one, legend has it my grandfather would be apoplectic until my grandmother made his favorite Jelly Cake every year at Christmas time. My mother describes Jelly Cake as a plain, two or three-layered, yellow cake with a thin layer of any flavored, homemade jelly in between the layers of cake. While my grandmother used fresh fruit she picked and canned herself, I am updating her creation to a Buttered Jelly Cake for the 21st Century baker.

If Native Americans prefer I am happily willing to exchange Thanksgiving Day for Native American Heritage Day. Declarations of holidays like Juneteenth are exactly the performative demonstrations few people of color welcome when we would have much preferred a federal Voting Rights Act. What I would like for Christmas is to see police not killing Black and Brown people with impunity. Critical Race Theory is taught in law schools, and not very many of them, I know because I went to law school, but children should be exposed to factual, honest history at every level of education. Murderous en-slaver Christopher Columbus believed he had arrived in India when he reached the shores of a 15th century Caribbean island. A 21st century, North American, Democratic Socialist India Walton has won an election to become Buffalo, New York’s next mayor; taking a page out of the book of Trump however, is the African-American incumbent Byron Brown who refuses to concede. Backed by Republican efforts, Mr. Brown’s efforts to steal the election may prevail. All I want for Christmas is democracy, equal treatment under the law, Buttered Jelly Cake and an El Moquito. Peace, be still.

A small, bundt pound cake drizzled with a homemade blackberry jelly and a butter glaze. I call it a Buttered Jelly Cake.

Buttered Jelly Cake

A twist on a cake my maternal Grandmother used to make, and my Grandfather adored, Buttered Jelly Cake is the healthy, fruit dessert recipe you'll want to create this holiday season.

Equipment

  • 4 Small No-Stick Bundt Cake Pans
  • Hand or Stand Mixer
  • Measuring Cups
  • Measuring Spoons
  • Cookie Sheet (optional)
  • 2 Saucepans
  • 2 Wooden Spoons or Spatulas

Ingredients
  

Cake

  • Cup Cake Flour
  • Cup Organic Cane Sugar
  • ¾ Cup Butter, softened
  • 2 Eggs
  • 1 tsp Organic Vanilla
  • ½ tsp Salt

Jelly

  • 10 oz. Frozen fruit Berries must be organic.
  • tbsp Butter
  • ½ tbsp Organic Corn Starch
  • ½ tbsp Organic Cane Sugar

Butter Glaze

  • 1 tbsp Butter
  • ¼ Cup Organic Confectioners Sugar
  • ¼ tsp Organic Vanilla
  • ¼ tsp Salt

Instructions
 

Cake

  • Turn on oven to 325 degrees.
  • Cream butter and sugar together.
  • Add eggs one at a time, then vanilla.
  • Add flour ¼ cup at a time.
  • Mix on low speed until flour disappears. Be careful not to over mix because it creates air bubbles.
  • Pour equal amounts of batter into the 4 mini bundt cake pans. Tap pans on the counter to remove air bubbles.
  • Place pans onto the cookie sheet and bake for 25 to 30 minutes.
  • Remove from oven and allow to cool.

Jelly

  • While the cake is baking add thawed fruit and its' juices to a saucepan on medium low heat.
  • Add remaining ingredients and bring to a boil.
  • Once the sauce thickens remove it from the heat.

Butter Glaze

  • Add all ingredients to a saucepan on medium low heat.
  • Once the butter is melted and the sugar dissolved remove from the heat.
  • Remove each cake from the bundt pan by gently inserting the tip of small, sharp knife into one of the edges of the pan. The cakes should release easily.
  • Spoon the butter glaze over the cakes. Then place the jelly into the cake's depression on top. Drizzle with more jelly if desired and serve with whipped cream, ice cream or as is.
