Caribbean Cabbage

Please don’t fret – 94% of people worldwide who have contracted the COVID-19 Coronavirus have recovered. Which is not to say we should not be vigilant about washing our hands and covering our mouths when we cough or sneeze – those edicts have never been in question. The other point that has never been in contention is that eating plenty of vegetables and fruits strengthens the immune system which also helps us combat viruses. The African Heritage Diet is comprised of mostly vegetables and fruit so here is another lovely take on cabbage, a cruciferous favorite that not only helps prevent a variety of cancers but has shown to improve the behavior of autistic boys in just weeks, becoming more verbal and social. Caribbean Cabbage

  • 1 Medium Organic Cabbage
  • 2 Tbs. Grass-fed Ghee or Earth Balance Buttery Spread (Vegan)
  • 1 stalk Green Garlic
  • 1/2 Tbs. Vegetarian Beef Stock
  • 1/2 Tbs. Jamaican Curry Seasoning
  • 1/2 Tbs. Spike Hot & Spicy Seasoning or Tony Chachere’s

Remove center core of cabbage, quarter the head and chiffonade. Heat ghee in a large frying pan on medium heat. Add chopped green garlic and stir for about a minute. Then add cabbage and seasonings, stirring constantly for 3 to 5 minutes. Remove from heat. Serves 4 to 6 people.
