The Ultimate Potato Salad Recipe

Progressive talk show host Thom Hartmann reported that Michelle Obama announced on her podcast she is mildly depressed. With what is happening, or not, with global race relations, the Covid19 pandemic and an impending U.S. presidential election, the former First Lady is feeling down; she’s not alone. Food is not the answer to every dilemma but it’s one way Black people have tried to lift their weary spirits in challenging times. A bite of the Ultimate Potato Salad is not a solution to what ails our community but it sure helps ease some of the pain.

For several years now I have questioned how self labeled liberals do not see the economic crises that is unfolding. I have probably written this before, but when I grew up in the 1970’s there was no such entity as a homeless person let alone family. President Chump loves to talk about how he has lowered the unemployment rate for African Americans. Right and left wing journalists alike fail us when they refuse to challenge his delusional rantings.

I turn to Free Speech TV and folks like Amy Goodman from Democracy Now to get my news. But I don’t need Thom, Amy nor Michelle to realize we’re in a situation that is soon to worsen. Many people never recuperated from the 2008 economic crash. Most of those people were BIPOC. The global pandemic is causing even greater job loss yet Wall Street is again making record profits. African Americans have a history of forming economic cooperatives when the capitalist system was not available to them. Sharing resources, and food like an ultimate Potato Salad coupled with the 10 Minute Mahi Mahi, is a model we should all borrow from our fore-parents.

Equipment

  • 2 Sauce Pans
  • Large to Medium Bowl
  • Large Spoon

Ingredients
  

  • 4 cups Organic Potatoes, diced I used New Yukon Gold & New Red Potatoes
  • 2 Eggs, hard boiled
  • 1/8 cup Celery, finely chopped
  • 1/8 cup Organic Dill Pickle Relish
  • 2/3 cup Organic Mayonnaise
  • 2 tbsp Organic Red Onion, finely chopped
  • 1 tbsp Organic White Vinegar
  • 2 tsp Jane's Krazy Mixed-Up Salt
  • 1 tsp Dry Mustard
  • 1/4 tsp White Pepper
  • 1 splash Dill Pickle Juice Optional

Instructions
 

  • Boil diced potatoes in salted water until you can easily pierce them with a fork, about 12 to 15 minutes. Boil eggs inside the shell in a separate sauce pan for about 6 to 10 minutes until hard boiled. Put potatoes, peeled and diced eggs, celery, onions and pickles into a bowl. Blend together remaining ingredients and gently combine with potato mixture. Chill for 20 minutes or more then serve.
