Light Creamy Coleslaw

While I was enjoying the last of the Light Creamy Coleslaw I made last week I noticed former Vice-President Joe Biden proposed a Build Back Better Plan. If he is elected President of the United States in November Biden says he would initiate multiple measures to stimulate the economy. In the plan he proposes tuition be waived at all Historically Black Colleges and Universities (HBCUs). That sounds great on the surface except that the majority of Black students attend and graduate from predominately white institutions of higher learning.
The Vice President also recommends a student loan forgiveness program for students that attended HBCUs, again somehow forgetting about the bulk of Black America. Just like Pete Buttigieg’s Douglass Plan before, it appears no Black people were consulted in developing the Biden plan even though I know several key campaign staff members are Black. I truly cannot fathom what the rationale behind the HBCU measures are.
Equally disappointing is the weak and vague verbiage about forming a police reform commission; such a response is underwhelming at a time when the entire world is peacefully protesting for police to stop killing Black people. Because Black women are the the backbone of the Democratic Party as well as in the Black Lives Matter movement, the Biden campaign should probably consult some of us before November rolls around.
I don’t fundamentally have an issue with students from HBCUs receiving special treatment, my late father is a graduate of Howard University School of Dentistry. If the Democrat cohorts however believe they have done enough to attract the young, progressive or any Black vote really, I believe they are remiss. In the meantime, prepare a healthy, light creamy coleslaw and some Guaymas Shrimp for yourself.

Light Creamy Coleslaw
Equipment
- Paring Knife
- Cutting Board
- Spoon
- Salad Bowl
Ingredients
- 1/2 Cup Organic Plain Yogurt
- 1 tbsp Organic Vinegar
- 1 tsp Lawry's Seasoned Salt
- 1/2 tsp Dry Mustard
- 1/4 tsp Organic Ginger Freshly grated
- 1/2 tsp Celery Seed
- 1 Dash White Pepper
- 4 Cups Organic Cabbage Finely shredded
- 1/4 Cup Organic Green Pepper Minced
- 1 tbsp Red Onion, minced
Instructions
- Combine yogurt with the next 7 ingredients. Cut vegetables, place into serving bowl, pour yogurt mixture on top and stir ensuring the vegetables are evenly coated. Refrigerate for 20 minutes so that seasonings may blend. Serve.
I don’t disagree with you, but, having been a staffer in a congressional office, President Biden (please!) would still need Congress for something like this, I believe. So the candidates can say all they want, but Congress needs to approve as well. And until we have a democratic senate, a lot of nothing will get done.
Democrats are no longer able to take Black women’s votes for granted. I know two Black women, both consistent Democratic party supporters that say if his rhetoric doesn’t change they will not vote for Biden. Sure, politicians on campaign trails make promises they often don’t keep. But if Biden does not value us enough to even whisper a few sweet nothings he knows will make us happy, he may find himself suddenly retired come mid November.
I hope that’s not true. I am going to hold my nose and vote for Biden, only because I desperately do not want the other person. And I will write letters telling him how he needs to appoint cabinet members that believe the way we do. That’s the best I can do. It’s going to be more what I don’t want than what I want. But I will still vote Democratic. Holding my nose. Sighhh.
I usually don’t enjoy coleslaw because I think many recipes make it too creamy, but this slaw had the perfect creaminess. I will definitely make again in the future.
