Beef Spring Rolls

With respect to the African American Heritage Diet, plant based does not mean meat free. Because much of what was consumed by our ancestors came from their own farms and gardens, adding small amounts of meat to almost every vegetable dish imaginable was a way to fortify protein intake. With that being said, I did something I have not done in over 25 years. I prepared a beef dish – Beef Spring Rolls with a Pluot Ginger Dipping Sauce.

Beef Spring Rolls Cooking Tips:

I purchased a grass fed, 1.85 lb. eye of round roast and cut it into thin strips before marinating it. I wanted a round steak but apparently they are not readily found anymore – it used to be a reasonably priced cut particularly for families. Because grass fed beef is a lot leaner than conventional, it tends to be tougher and drier so pounding the meat with some sort of mallet and marinating are mandatory. Place the meat in a gallon sized, resealable plastic bag, seal it and pound the meat until it flattens. If you don’t own a meat mallet use a heavy jar. Let the meat marinate in the refrigerator overnight, 12 to 24 hours is sufficient. 

When you’re ready to prepare the beef, simply heat 1 Tbsp. of Toasted Sesame Oil to medium heat in a large frying pan. Once the pan is hot, cook the meat for about 3 minutes on each side. Grilling is also an option. Beef Spring Rolls pair well with Vegetable Fried Quinoa and Thai-ish Coleslaw.

Ingredients
  

Pluot Ginger Dipping Sauce

  • 2 Pluots or Plums, peeled and pitted Ripe
  • 2 tsp Fresh grated Ginger
  • 2 tsp Fish Sauce
  • 1 tsp Lime Juice
  • 1 tsp Redmond's Real Salt
  • ½ Small Jalapeno, minced Optional

Beef Spring Rolls

  • 1.8 lb. Eye of round roast, cut into thin strips
  • ¾ cup Organic Toasted Sesame Oil
  • 4 cloves Organic Garlic
  • ½ tbsp Walkerswood Jerk Sauce
  • 3 sprigs Fresh Rosemary
  • 4 sprigs Organic Thyme
  • ½ cup Organic Fresh Basil Leaves, chopped
  • 1 small Organic Red Onion, roughly chopped
  • 2 tsp Redmond's Real Salt
  • 1 tsp Organic Cumin
  • 1 tbsp Organic Ginger Root, minced
  • 1 tbsp Organic Toasted Sesame Oil
  • 2 cups Organic Greens
  • ¾ cup Organic Green Onion
  • 2 bags Shiritaki Noodles
  • 1 cup Organic Cucumber, sliced
  • 1 cup Organic Cilantro

Instructions
 

Beef Spring Rolls

  • Pound beef with a mallet to tenderize.
  • Combine the beef strips and next 10 ingredients into a resealable, plastic bag and refrigerate overnight.
  • Add 1 tbsp. Toasted Sesame Oil to a large skillet at a medium high heat.
  • Cook strips for about 3 minutes on each side.
  • Wet rice paper and assemble rolls with thin layers of organic greens, green onions, shiritaki noodles, cilantro, cucumber and beef strips. Fold rolls and then serve with the dipping sauce. (See video).

Pluot Ginger Dipping Sauce

  • Add all ingredients to a blender or food processor and emulsify.
  • Set aside. Once rolls are assembled, serve alongside or on top.

Tip: You can add Shirataki Noodles as well.
