Vegan French Lentil Soup

I am in detoxing mode from Thanksgiving food and drinks, so soup is on the menu until we get nearer to Christmastime. First up, a superb Vegan French Lentil Soup that is hearty, healthy and something that won’t make you feel deprived. Try to purchase your lentils at a store where the inventory frequently turns over because they are challenging to cook when they’re old. Also, make sure to use organic herbs and local garlic if possible. Come to discover, the majority of garlic now sold on the US is from China and has gone through a toxic, bleaching process. Let’s be knowledgeable and safe!

French Lentil Soup

  • 6 Cups Water
  • 1 1/2 Cups Organic French Lentils
  • 1 1/2 Tablespoons Vegetarian Chicken Stock
  • 3/4 Cup Organic Olive Oil
  • 1/8 Cup Organic Celery
  • 1/8 Cup Organic Red Onion
  • 3 Cloves Organic Garlic
  • 2 tsp. Sage
  • 2 tsp. Cumin
  • 1 tsp. Thyme
  • 1 tsp. Oregano
  • 1 tsp. Basil
  • 1 tsp. Marjoram
  • 1 tsp. Rosemary
  • 1 tsp. Real Salt
  • 1 tsp. Jane’s Krazy Mixed-Up Salt
  • 1/2 tsp. Old Bay Seasoning

Finely chop garlic, celery and onions. Place all ingredients into a medium sized saucepan at a relatively high heat and bring to a boil. Turn the heat down to low and cover. Let cook for approximately 1 hour or until the soup has thickened. Serve Vegan French Lentil Soup and a Southern Squash Gratin or a Shrimp Po’ Boy Salad for dinner or lunch.
