Since our president has made sure we are not invited anywhere this summer, I had to bring a little of Europe home with the best Euro Veggie Burger recipe. I used a Beyond Burger patty, which lacks soy because I’m allergic to that, then added Dutch gouda cheese, French Dijon mustard, German sauerkraut and English rocket which I’m obsessed with. One of my most indelible food memories happened in a Swiss train station, traveling with my parents from Paris to Geneva. If you have been to Switzerland you know it has a French, German and Italian region. On our way to visit family, I was famished so decided to jump off the train at a station where the people spoke German. I had just enough time to get a veggie panini sandwich before the train lurched away. Mom and Dad were envious after I gave them small bites. The Euro Veggie Burger pays homage to that legendary panini.

  • Beyond Burger patty
  • Udi’s Gluten Free Hamburger Buns
  • Gouda Cheese
  • Sonoma Brinery Garlic & Dill Sauerkraut
  • Organic Mayonnaise
  • Dijon Mustard
  • Red Onion sliced
  • Organic Tomato sliced
  • Rocket aka Arugula

Heat the frozen veggie burger patty per instructions, when you flip the veggie burger add thinly sliced gouda or vegan cheese to the top. Heat oven to broil, butter each piece of bread and toast in oven for about a minute, watching closely. Add condiments to bread then veggie burger patty.
