Vegan Jollof Quinoa

With so much happening in the news, the frustration is that some reports are not changing. I have been flitting about working on some things I will be excited to share soon. I made this Vegan Jollof Quinoa ages ago meaning two weeks prior, but doesn’t that seem like last year?
The palpable tension of the moment cannot be understated. My neighbor admonished me to grocery shop early and well before the election because no matter who wins trouble will ensue (she insinuated she thinks it will be Biden). Young agitators will be roaming the streets rioting and rambunctious because their candidate did not come out the victor. I hope she is right about some things, others no.
I will continue to be hopeful, continue to fight against oppression in any form, continue to speak out against racism, sexism and discrimination, never tire and never stop in these efforts. I will continue to be a learner, to evolve, to try, hopefully thrive. I will continue to create new recipes like the Vegan Jollof Quinoa; I’ll keep pairing the novel with the true blue classics like Caribbean Cod and keep real hope alive. #BLM.

Vegan Jollof Quinoa
Equipment
- Medium Saucepan
- Measuring Cup
- Large Spoon
Ingredients
- 3 cups Water
- 1 ½ cups Organic Quinoa
- 1 cube Not Beef Bouillon Cube
- 1 tbsp Organic Ghee
- 1 ½ cup Organic Tomatoes, chopped
- 1 tbsp Organic Ginger Root, grated
- 1 Jalapeno, minced Habanero peppers are more authentic. Use with caution.
- 2 cloves Organic Garlic, minced
- 3 tbsp Organic Red Onion, minced
- ¼ tsp Chef Curlardee Jerk Seasoning
- ⅛ tsp Real Salt
- 1 ½ cup Organic Okra, chopped Optional
- ¼ tsp Organic Thyme
Instructions
- Heat water in saucepan on high heat.
- Once water is at a boil, add all ingredients and reduce heat.
- Cook on low heat until all water is evaporated stirring periodically.
- Once water is gone, remove from heat immediately and serve.
This recipe comes out really nicely. I wanted to try a vegan variety of a jollof dish and was certainly not disappointed. Very tasty indeed. Thanks for sharing this.
